Fragrant Spring Tree

Toona or Cedrela sinensis

This unusual and remarkable tree from China grows to 30’ or more, but you can repeatedly cut it back and eat its attractive compound leaves and new shoots. With a taste reminiscent of leeks, sort of a cross between onion and garlic, the attractive red new leaves make a wonderful culinary herb for stir fries and other cooked dishes.
